My first time making pizza and it was a success! I made two pies and a little mini guy from a tiny piece of extra dough.
I got the recipe for the dough from Emeril!
I used my KitchenAid and I will admit that I was a bit concerned at first certain steps took longer than expect (particularly forming the ‘paste’ using the whisk), but it happened after about 10-15 minutes. I ended up using about 3 and 1/4 cups of flour and followed the directions for making the dough… and it turned out delicious!
It took an hour for the dough to rise … and then I played with it for a little and cut it into two pieces and let it rise again for about 15-20 minutes.
Then when I rolled out the dough, I rubbed down the crust with Olive Oil and sprinkles Parmesan cheese all over before applying the tomato paste. I used a tomato pasta that has Italian herbs and it was so tasty! Then I put fresh basil (from my little garden) over the sauce and then I added freshly grated mozzarella cheese and small slices on the first pie, and the second pie I topped with fresh buffalo mozzarella.
I don’t have a pizza brick *YET* so I used a cookie sheet that I sprayed with Baker’s Joy and I put the sheet on the bottom rack with the oven at 500 degrees. Each pizza took about 8 minutes and then dinner was served!
It was such a great experience to make pizza at home and my boyfriend declared my pizza ‘the best’ but I said we should try pizza IN ITALY before making such a declaration (of course I just want to go to Rome!) :)

Cheese ball! So, we enjoy cheese and crackers… But with cream cheese as well so I decided to mix it all up to make an easy to eat snack…. I softened cream cheese and using my KitchenAid with the flat paddle, I mixed in one cup of fresh shredded swiss and one cup of shredded white cheddar in with the cream cheese along with a dash of paprika, garlic powder and worchestire sauce. Then I used wax paper to shape it into a ball and then I put it in the refrigerator (you can eat it right away). It is a great snack!! Of course you can use whatever cheese you want and you can also rolls the ball in nuts if you’d like! Enjoy :)
I made bread and it actually tastes like bread this time! Such a great feeling… Anyone need bread? I have extra :)
